Healthy, tasty and great to be able to swap between Bison, Elk & Ostrich.
Gas grilled same for all 3 meats. Heat grill on high, spray grate then lowest setting 6 minutes per side.

A friend sent me some of these as a gift -- and what a gift! These are the best darn burgers I've ever had. Of course, perhaps I was a little predisposed to like them being a huge fan already of Turkey Burgers, but these far surpassed Turkey on the taste and texture scale. I would describe them as a tasting about halfway between a Beef Burger and a Turkey burger, all the while being twice as delicious as either.

Heated grill on high, sprayed with olive oil
4 minutes/side on med/low heat flipping once.
Did not press them and let them sit for 3 minutes before serving.
I found no need to use seasoning of any kind.

Once you try this meat you will be a convert. It's much different than beef in that it is so much leaner and sweeter. Be sure NOT to over cook it (or any grass-fed meat product) because it will get a bit rubbery. Seriously though, the best ostrich on the market comes from North Star Bison! It's worth EVERY penny!
