    Bison is a great source of lean protein and is significantly higher in iron than beef. Cooking bison steaks is very similar to cooking beef steaks, but because the meat tends to be leaner than beef, bison may dry out if cooked too long. Given the reduced saturated-fat content of bison, it is appropriate to use an olive oil-based marinade, which boasts essential fatty acids necessary for good health. An olive oil marinade will make bison steaks more tender while providing heart-healthy fat.
