Whole Bison Eye of Round Roast weighs 1.5-2 lbs and is tubular in shape. Season with favorite red meat seasoning over some a light oil coating, rest over night and braise 10 min., followed by low (170 degrees F.) heat to roast for 2-4 hrs. Check for preferred doneness with meat thermometer.
