I wanted to express my deep appreciation for the superb quality of your bison.
We made the bone in short loin for July the 4th. What could be more American? We did this as a whole roast, with all the bone and fat.
The meat was beyond good. In fact, it was beyond great. The bison, cooked to a perfect medium rare, was juicy, very tender, with a clean, deep, sweet taste that was a joy to experience.
After eating, everybody at the table agreed that they felt satisfied, renewed and energized, instead of stuffed or bloated.
You and everybody else at Northstar Bison should be very proud of your meat. If meat were wine, your meat would be comparable to the finest, most expensive and sought after French wines.
The French, Spanish, and Italian governments award a special designation to the very finest food products. This is done to encourage and support the production of the very best of traditional foods, produced naturally, in the traditional way. This designation goes to a wide variety of products, including chickens, hams, peppers, cheeses, paprika, a particular kind of beef, and many more. If we had such a program in America, I would nominate your Bison.
